Soy protein concentrate is manufactured by aqueous or alcohol extraction of defatted soy flour to remove soluble carbohydrates and anti-nutritional factors followed by drying, used as a functional protein providing emulsification, water/fat binding, texturization, and nutrition (65-70% protein) with improved flavor and digestibility compared to soy flour.
